Masala Pav





This is one of my favorite appetizers to get at Honest, in India & now here. It's basically deconstructed pav bhaji topped with loads of amul cheese!!! It's a really quick & easy snack, also a perfect way to use up leftover pav bhaji. I have a pav bhaji recipe that I photographed a million years ago, but never posted because I honestly don’t know if the internet needs one more recipe for it lol. I figured doing something like this would be better instead! I hope you all enjoy this. Make sure to check out the notes sections for modifications and suggestions.

Notes:

  • You don’t need leftover bhaji to make this. The taste will not be altered if you don’t have left over bhaji, I had it so I used it.

  • You can do this with bread roll, burger roll, pav, or even regular sliced bread.

  • If you can find amul cheese, use cheddar cheese.

  • I prefer using Amul butter but if you don’t have that kerry gold is VERY similar in taste. Whatever butter you have on hand will work as well.

  • If you don’t have thai chilies you can use jalapeno or serrano peppers.

Ingredients:


  • 4 buns, diced

  • 1 onion, chopped

  • 2 garlic cloves, finely chopped

  • ½ tomato, finely chopped

  • ½ bell pepper, chopped

  • 2 thai chilies

  • 1 tbsp butter

  • ¼ cup leftover pav bhaji (optional)

  • 1 tbsp pav bhaji masala

  • Juice of half a lemon

  • Salt to taste

  • Chaat masala to taste

  • Shredded amul cheese

  • Cilantro, chopped


Directions:

  1. In a large tawa style pan heat the butter. Once butter is hot add onion, garlic, thai chilies, and saute until the onion is soft and translucent. Then add bell peppers and cook for another minute.

  2. Add tomatoes, pav bhaji masala, and salt. Cook for a minute and add more butter if needed.

  3. Toast the diced buns until golden brown. (optional step, but recommended. This will make the pav hold its crunch better).

  4. Add the leftover bhaji if using, then add the diced bread (buns). Mix until everything is well coated onto the buns.

  5. Turn off the stove, squeeze lemon juice on top and sprinkle with chaat masala,

  6. Take it out on a plate and top it with shredded cheese & cilantro.

  7. Serve hot!
