Cheesy Arrabbiata Spaghetti



Cheesy Arrabiata spaghetti is cheesy, spicy, and sauce. This spaghetti is my ULTIMATE comfort food. When I'm feeling down and need to stuff my face with carbs this is my go to.




I’m going to be really annoying and tell you the backstory of this recipe. The summer of senior year in high school, I spent about 3 weeks in Milwaukee, Wisconsin at a family friends house. This is their dad’s famous spaghetti recipe that I still dream about. I hope I did it justice!!


My dad’s friend had two daughters. Their brother went to BC in Boston. They stayed at our house when they came for his graduation, and we immediately clicked as soon as we met. We had sooo much together so I ended up flying to Wisconsin with them for a couple of weeks. All we did was eat good food including this spaghetti that I still haven’t forgotten about and watch friends!! The memories are still so vivid, we were all so carefree and just living our best life! I hope this becomes your comfort food as well.

Notes:

  • I do not drain the water because that is how my friend's dad makes it. If that makes you uncomfortable you certainly can.

  • You can add 1 tbsp of butter once it’s done, it will be even more luxurious.

  • You can use any sauce you have on hand but for some reason I love ragu traditional in this.

  • I used mexican blend cheese, you can use cheddar or whatever else you have on hand.

Total time: 20 minutes

Serving size: 6 people


Ingredients:

  • 1 box spaghetti

  • 2 ½ cups pasta sauce of choice, I used Ragu traditional

  • 5 cups water

  • 3 tbsp butter

  • 2 tbsp garlic, crushed

  • 8 thai chilis, crushed

  • 1 tsp red chili powder

  • ¼ tsp oregano

  • ½ tsp red crushed pepper

  • 1 ½ cups mexican blend cheese

  • Salt to taste

  • Pepper to taste


Directions:

  1. In a pan boil water add garlic, thai chilies, butter, and salt. Add spaghetti once the water is at a rolling boil. Cook spaghetti until it's al dente.

  2. Once the spaghetti is cooked add pasta sauce. (DO NOT drain the water)

  3. Then add cheese, red chili powder, red crushed pepper, and black pepper. Cook until all the cheese has melted and sauce has covered the spaghetti.

  4. Turn off the heat and add oregano, mix well.

  5. Slurp away!
